although one of the smaller grande marques, billecart is exceptional quality and rated very highly by the wine press and champagne enthusiasts alike. jancis robinson said this about billecart: “the real reason I want to bring this decidedly superior champagne to your attention is that I tasted 18 current non vintage cuvées of the most famous champagne houses last week blind – a rare treat – and billecart-salmon brut réserve was the most impressive for me”. robert parker also rates it: “this remains something of an insider's secret. the non-vintage brut is one of the best in the marketplace”

exhibiting floral aromas and notes of toasted almonds and cashews, the buttery palate has flavours of vanilla, citrus and mineral. this would pair well with foie gras, seafood and tarte tatin.
